This was an absolute HIT with mom, Faith and Lane. I wanted to make a delish southern dinner for my southern boy..so what better meal than Jambalaya?! Prep was about 20 mins (chopping) and stove time was 45-55 min (medium/low heat for 45 covered, low heat for 10 covered). Use the same large wok for it all! Made 6 hearty servings.
Grocery:
- veggie oil
- 1 garlic
- 1 onion
- 1 green bell pepper
- red pepper flakes (spice)
- creole/cajun seasoning (spice)
- bay leaves (spice)
- 1 lb sausage
- 1 lb raw chicken
- 2 can diced tomatoes
- 1 can tomato sauce
- chicken broth
- rice
Exact Ingredients:
- 1/4 cup vegetable oil
- 3 cloves garlic, minced
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1-2 pinch dried red pepper flakes (depending on how spicy you want, I did 2)
- 1 lb Louisiana or Cajun sausage, sliced into 3/4 inch rounds
- 1+ lb uncooked chicken breast, cubed
- two 14 oz cans diced tomatoes
- one 15 oz can tomato sauce
- 2 bay leaves (for flavor)
- 1 cup chicken broth
- 1.5 tsp creole seasoning (I used cajun seasoning)
- 1.5-2 cups uncooked rice
Get Cookin':
1. Bowl 1: chopped onion, chopped green pepper. Bowl 2: minced garlic, pepper flakes. Bowl 3: cubed raw chicken, sliced sausage rounds, sprinkled creole seasoning. Bowl 4: diced tomatoes, tomato sauce, bay leaves. Bowl 5: rice and chicken broth
2. Heat up oil in wok, throw in onion and pepper and cook/stir on high-ish until translucent colored (about 5-10 mins)
3. Add red pepper flakes and garlic to wok and stir until you can smell the garlic (about 3 mins)
4. Throw in chicken and sausage with the seasoning and mix it up (1 min)
5. Add 2 cans diced tomatoes, 1 can tomato sauce and the bay leaves. Make sure everything is coated.(1-2 min)
6. Add rice and chicken broth. Stir it well and make sure everything is coated. Cover the wok and turn heat down to medium/low (I had it at 4 on a 9 gage stovetop)
Cook covered like this on med/low for 45 minutes. Stir every 10 minutes or so to make sure rice is absorbing liquid. After 45 min (if rice most of liquid is absorbed - if not, cook at this temp for another 5-10 min checking frequently), turn down heat to low and keep covered (had mine on a 2) for 10 min or until ya eat!
